Which precious metal wire forms the best, and does it hold its shape?

Full-hard wire is the least malleable, although it can still be formed with jewelry-making pliers. Once it has been formed to its final shape it holds very well.
Half-hard wire is easier to work with when forming and can be tapped lightly with a nylon or rawhide mallet to harden; once hardened, half-hard wire also holds the formed shape well.
